Chicken Penyet Recipe


Material :
• 1 small chicken, cut into four
• 300 ml water
• 2 bay leaves
• Oil to taste, for frying

Seasonings, blend :
• 4 cloves garlic
• ½ teaspoon coriander
• 1 cm turmeric
• 3 cm ginger
• 3 cm galangal
• 1 ½ teaspoon salt

Sambal :
• 3 red onions
• 1 clove garlic
• 6 red curly chilies
• 5 pieces of red chili sauce
• ½ plum tomatoes
• 1 teaspoon shrimp paste, fried
• ½ teaspoon salt
• 1 tablespoon brown sugar, sliced
• 1 bunch basil, pick leaves
• 2 pieces of lime, halved

Directions :
1. Marinate chicken with seasoning. Add bay leaves and water. Cook until chicken is tender. Remove and set aside.
2. Fry chicken until cooked. Remove and set aside.
3. Sauce: sauté onion, garlic, peppers, and tomatoes to wilt. Blend with shrimp paste, salt, and sugar. Add juice of lime and basil leaves. Mix well.
4. Place fried chicken on top of sauce. Press until the sauce stick to the chicken meat.
5. Serve.
